Ingredients:

  • 1/4 cup Cooking Oil
  • 1/4 cup Garlic, Minced
  • 1/4 cup Raw Garlic Minced
  • 1 tbsp. Oyster Sauce
  • 1/2 tsp. Sugar
  • 1/2 tsp. Salt
  • 1/4 tsp. White Pepper
  • 1 tbsp. Cornstarch Mixture (1 to 2 Ratio of Cornstarch to Water)
  • 4 Large Scallops
  • 1 large Yellow Sweet Potato
  • Garnish
  • 1 tsp. Red Thai Chili Peppers
  • 1 tsp. Green Onion, Chopped
  • Drizzle
  • 1 tbsp. Hot Cooking Oil

Cut a cross pattern onto the fresh shellfish without completely slicing through it.

Fry the garlic oil. Put the oil in a pot with medium heat, add the garlic and fry it until golden yellow. Then remove it and put it in the bowl for use. Note that the heat should not be on too high during the cooking process, otherwise it will easily get burned.

Placed half of the fried garlic and half the raw garlic into a bowl. Put oyster sauce, sugar, salt, white pepper, and starch water. Mix well.
