Spring Rolls With Peanut Sauce

Fresh and light rice paper spring rolls. Crispy vegetables are packed in tightly with some tasty sesame-flavored rice noodles. The exquisite no-cook peanut dipping sauce is whizzed up in a flash merging some sweet-salty and nutty flavors together to create a fantastic vegetarian no-cook meal. Note: A gluten-free GF vegan V and vegetarian V delight.

Ingredients:
  • 8 sheets Spring roll wrap
  • Vermicelli Noodles
  • 1 qt. Boiling water
  • 2 oz. Vermicelli noodles
  • Coldwater
  • 1 tsp. Sesame oil
  • Peanut Sauce
  • 3/4 cup Peanut butter
  • 4 tbsp. Rice vineager
  • 3 tbsp. Water
  • 4 tbsp. Soy sauce
  • 1 tbsp. Sesame oil
  • 2 tbsp. Honey
  • 2 cloves Garlic
  • Filling
  • 1 cup Butter lettuce
  • 3(julienne) ea. Persian cucumber
  • 2(julienne) ea. Carrot
  • 1(thin Slice) cup Red cabbage
  • 1/4 cup Green onion
  • 1/4 cup Mint
  • 1/4 cup Cilantro

Start by getting our water boiling to cook our Vermicelli noodles. Cook all the way through and drain in a strainer and run cool water until it's cold. Transfer back into the pot and mix with sesame oil, salt, and pepper.

Time to get our veggies cut to fill our wraps, cut the butter lettuce and peel and slice carrots, cucumbers, red cabbage. Fine chop up our mint, cilantro, green onion and mix the three together. In a shallow pan put warm water for the rice paper to soak in.

After 20 seconds each sheet place on a wet and clean towel to prevent sticking.

Leaving one inch all around the rice wrap we will start stuffing our wrap with our veggies, herbs, and vermicelli noodles

To roll up, we start from the bottom edge and roll up halfway through. Fold in your right and left edge and continue to finish rolling up. Repeat until you're out of paper or filling.

Peanut sauce is quick and easy. In a mixing bowl add peanut butter, soy sauce, honey, garlic, rice vinegar, and water. Start mixing until it starts losing up and mixing.
