Creamy Avocado Cucumber Soup

  • cup Cilantro
  • 3 small Persian cucumber
  • 3 ea. Green onions
  • 1/2 1 small Jalapeño
  • clove Garlic
  • 3 tbsp. Lime juice
  • 1 cup Water
  • 1 tsp. Salt
  • 1/2 tsp. Pepper

Blend avocado, cilantro, cucumbers, green onions, Jalapeño, garlic, lime juice, water until it is smooth.

Salt and pepper to desired taste. If you think the soup is too thick add more water to thin it out. Let it cool in the fridge for at least one hour to set.
