Spring Onion Ginger Fish Fillets

This pan-fried fish recipe needs no breading or flour, just salt and a little cornstarch to lock in the natural flavors. Top it off with the staple of all Asian cooking: green onions, ginger, and garlic, and you got yourself the best fish fillet for two!

Ingredients:
  • 1 Large Yellowfin croaker
  • 1 Tbsp Cornstarch
  • 1 Cup Asparagus
  • 2 Tbsp Shishito pepper
  • 1/2 Cup Scallion
  • 2 Tbsp Shallot
  • 1 Tbsp Ginger
  • 1/4 Tsp Sesame Oil
  • 1/4 Tsp Ground white pepper
  • 1 Tsp Sugar
  • 1 Tbsp Cooking wine
  • 2 Tsp Dark soy sauce
  • 1 Tbsp Light soy sauce
  • Cooking oil
  • Salt to taste
Directions:

Dry both sides and fillet the fish. Season both sides with salt and cover in cornstarch. Remove the bottom half of the asparagus.

Heat up the skillet, and sear the fish fillet until the skin turns golden. Add the asparagus to the skillet, season with salt. Set aside once they’re both cooked.

Slice pepper, scallion, shallot, and ginger. Combine white pepper, sugar, sesame oil, cooking wine, dark soy sauce, light soy sauce in a small bowl.

Add the chopped ingredients and sauté until aromatic, then add sauce mixture. Pour the sauce onto the fish fillet. Serve.
