Ingredients:
  • 1 lb. Hairtail Fish
  • 2 cup Cooking Oil
  • 2 tbsp. Peppercorn    
  • 2 tbsp. Minced Garlic             
  • 2 tbsp. Minced Ginger  
  • 1 tbsp. Fermented Soy Beans  
  • 1 tbsp. Pickled Pepper, Chopped       
  • 2 tbsp. Chopped Green Onion  
  • 1 tsp. Cooing Wine
  • 1 cup Water
  • 2 tbsp. Soy Sauce  
  • 1 tsp. Sugar                  
  • 1 tsp. Sweet Black Rice Vinegar 
  • 3 tbsp. Slurry(a mixture of water and starch of equal proportions)
  • 1 tsp. Chili Oil or Chef-made Chili Oil (see "chef john's signature oils" video)
  • 1 tsp. White Sesame Seed

Cut hairtail fish into the small pieces, dice pickled chili peppers, and mince fermented beans.

In a cooking pan, bring enough oil to 300-350°F/150-180°C, and deep fry ribbonfish until golden. Drain.

Return the pan to the stove, add oil and peppercorns, and fry until fragrant. Remove the peppercorns.

Add minced garlic and minced ginger. Stir-fry until fragrant.

Add minced fermented beans, diced pickled pepper, chopped green onion, water, and fried fish.

Add soy sauce, sugar, sweet black rice vinegar, and slurry. Cook for 2~3 minutes until the sauce has reduced 50%, sprinkle finely chopped green onion, and drizzle chili oil.
