Tea-Smoked Pork Ribs

Perfectly tender, deeply seasoned pork ribs with a hint of tea-smoked flavor are perfect for weekend gathering. You’ll be surprised how easy it is.  Plus you do not need a smoker, you can do it with a wok!

Ingredients:
  • 2 lb. Pork ribs
  • 1 oz. Garlic cloves
  • 2 oz. Onion, julienned
  • 5 piece Sliced ginger
  • 1 tbsp. Shaoxing Wine
  • 6 count Red chilis
  • 0.25 cup Hoisin sauce
  • 3 oz. Rock sugar
  • 0.25 cup Soy sauce
  • 4 cup Water
  • 1 oz. Onion, diced
  • 1 tbsp. Cornstarch + Water
  • 1 oz. Sugarcane leaves
  • 1 oz. Tea leaves
  • 2 oz. Brown rice
  • 2 oz. Sugar

In a wok, bring enough cooking oil to 250-300°F/120-150°C, deep-fry garlic cloves until golden. Remove from oil, and drain.

Return the wok to the stove, add cooking oil, and sear both sides of ribs until brown. Then remove ribs from wok.

Return the wok to the stove, stir-fry julienned onions, a couple of sliced ginger, and a couple of red chiles until fragrant. Then add Hoisin sauce, sugar, soy sauce and water. Bring to boiling and mix well.

Then put in the pork ribs, lower the heat, and stew for 2 hours.

Remove the ribs, turn up the heat, add onion diced and slurry to thicken the sauce to desired consistency. Save the sauce in a bowl.

In a wok, add sugarcane leaves, tea leaves, brown rice, rock sugar, and star anises. Stir to mix well, and heat to smoking.

Place a rack in the wok, brush oil on the rack place the pork ribs on the rack. Cover the lid for 10 minutes. Serve the ribs with sauce on the side.
