Ingredients:
  • 7 oz. Salted egg yolks
  • 5 oz. Shrimp, peeled and deveined
  • 0.5 tsp. Salt, to taste
  • 0.5 tsp. White pepper, to taste
  • 1 tsp. Cooking wine
  • 1 count Egg white

Boil salted eggs: bring a large pot of water to boil, carefully put in salted eggs and boil for 10 minutes.

Take eggs out and place them in iced water.

Take eggs yolks out.

Mash egg yolks. Set aside.

In a mixing bowl, add shrimps, salt, white pepper, cooking wine and egg white, mix thoroughly.

Coat shrimps with starch.

Deep fry shrimps at low temperature till shrimps are done. Take them out.

Quickly re-fry at high temperature to make shrimp crispy.

Leave a little oil in the same wok, stir fry mashed egg yolks till turn to creamy.

Add shrimps and stir until all shrimps are coated with egg yolk.
