Seafood Chow Mein

Loaded with tender and delicious seafood, this Chow Mein is just like what you get at your favorite Chinese restaurant but it’s made at home in under 30 minutes! It includes clam, shrimp and squid along with broccoli, garlic and onions. YUM!

Ingredients:
  • 10 oz. Thin egg noodles
  • 3 tbsp. Cooking oil
  • 1 tbsp. Garlic, minced
  • 0.75 cup Onion, julienned
  • 1 tbsp. Oyster sauce
  • 1 tbsp. Soy sauce
  • 0.5 tsp. Sugar
  • 1 tbsp. Cooking wine
  • 1 stalks Green onion, julienned
  • 1 tbsp. Chef Made Assorted Aroma Oil (See "Chef John's Signature Oils" Video)
  • 3 oz. Squid
  • 8 oz. Clam
  • 1 cup Tiger Prawn Shrimp
  • 1 tbsp. Cooking wine
  • 1 tbsp. Garlic, minced
  • 0.3 cup Red chili pepper, sliced in circle
  • 1 tbsp. Cooking wine
  • 2 cup Water
  • 0.5 cup Carrot, sliced
  • 1 cup Broccoli
  • 1 tsp. Salt, a pinch
  • 1 tsp. White pepper, a pinch
  • 3 tbsp. 2 Tbsp Cornstarch Mixed With 1 Tbsp Water

To cut the squid. place the squid skin side down, and score shallow diagonal cuts at about ¼ inch apart in a crisscross pattern. Make sure do not cut right through the squid.

Then divide the squid into 3 equal parts.

Cut broccoli crown into small pieces.

To prepare noodles. Steam the thin noodles for 10 minutes to make the noodles chewier and not easy to break.

Then quickly put the noodles through boiling water.

Rinse with cold water. Set aside.

In a cooking pot, bring enough water to boiling, and add the squid and clam in the pot. Pour a tablespoon cooking wine in the pot, and quickly remove from the pot. Set aside.

To stir fry noodles. In a wok over high heat, add 2 tablespoon oil, garlic, onion, and prepared noodles. Stir fry several times.

Add oyster sauce, soy sauce, sugar, green onion, and chef John’s aroma oil. Quickly stir fry several times until mixed well. Remove from wok.

To stir fry seafood. Return the wok to heat, add a tablespoon cooking oil, garlic, red chili pepper, shrimp and carrots. Stir several times

Then add water broccoli, salt, white pepper, squid, and clam. Then, add slurry to thicken.

Quickly stir fry several to mix well, and drizzle a few drops chef John’s aroma oil. Remove from heat.

Top the stir-fried seafood on top of stir-fried noodle. Serve hot.
