Romias Cookies Recipe|Nougatine Butter Cookies

Ingredients:
  • 7 oz. Butter
  • 2.9 oz. Sugar powder
  • 1.1 oz. Egg white
  • 1/4 tsp. Salt
  • 0.4 tsp. Vanilla extract
  • 3.9 oz. Cake flour
  • 3.5 oz. Cake flour
  • 0.42 oz. Cocoa powder
  • Almond Nougat
  • 1.7 oz. Starch syrup
  • 1.7 oz. Sugar
  • 1.7 oz. Butter
  • 2.1 oz. Roasted chopped almonds
Directions:

Almond Nougat: Heat syrup, sugar, and butter in a saucepan over medium heat.

Boil all the way to the center of the pot. When the color turns white, add almonds.

Stir with a spatula and pour over the Teflon sheet when the almonds are thoroughly mixed with nougat.

Cool thoroughly and divide into 3g pieces to make a round shape.

Add salt and sugar powder to soft butter at room temperature and mix with a whisk.

When sugar powder is mixed gently, divide the white and vanilla extract at room temperature into 3 ~ 4 times and mix.

After weighing the dough, divide it into half and add the cake flour in the plain part and the cake flour and cocoa powder in the chocolate part.

Mark the sheet with a diameter of 5cm and pipe it in a ring shape using a star nozzle.

Put Nougat in the middle and bake 17 minutes at 160 C.
