Roasted Curried Cauliflower With Chermoula

A Holiday in a bowl, the vibrant charred cauliflower infused with curry spices. Sits on top of the warm flagrantly exotic and smokey chermoula sauce. A drizzle of red wine vinegar makes the sauce sing. homemade pita bread will add that special tool to scoop up all the flavors. Ingredients:
  • 2 cup Cauliflower florets
  • Chermoula sauce
  • 2 tsp. Olive oil
  • 1 ea. White onion, chopped
  • 2 tsp. Smoked paprika
  • 1 ea. Serrano chili, diced
  • 2 cup Can tomato
  • 1 clove Garlic, grated
  • 2 tbsp. Red wine vinegar
  • 1/4 cup Extra virgin olive oil
  • 1 bu. Parsley, chopped
  • Curry powder
  • 2 tbsp. Extra virgin olive oil
  • 2 tsp. Curry powder
  • 1 tsp. Garam masala
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 2 tbsp. Extra virgin olive oil
  • Pita
  • 9 oz. Pizza dough
  • 1/4 cup Flour
  • Toss The Curry Cauliflower
  • 2 ea. Fresno, sliced
  • 1 tbsp. Raisins, chopped
  • 3 ea. Shallots, sliced
  • 1 tbsp. Almond nuts
  • 1 tbsp. Cilantro, chopped
  • 1 tbsp. Red wine vinegar
  • 2 tbsp. Extra virgin olive oil
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper

In a medium pot sweat the onions in olive oil.

Add the smoked paprika, serrano, cook for 2 minutes. Add canned tomato and cook for 10 minutes. Season with salt and pepper to taste.

Mix [Curry powder] and toss the cauliflower florets and pour into baking pan and bake at 450°F/230°C (about 15 minutes).

Roll out the pizza dough dusted with flour 1/4 inch and cut with a small circular ring mold. Bake at 450°F/230°C oven till light brown.

After chermoula sauce cooled, whisk in grated garlic, red wine vinegar, extra virgin olive oil, and parsley.

Toss in the curried cauliflower cilantro, sliced Fresno, sliced shallots, almonds, and raisins. Toss and season with salt and pepper.
