Ingredients:
  • 3 piece Chicken breasts
  • 1 count Cauliflower, cut into small florets
  • 1 tbsp. Olive oil
  • 1 tbsp. Flat-leaf Parsley
  • .5 tbsp. Mint
  • 1 tsp. Ground Cumin
  • 1 tbsp. Lemon juice
  • 1 tbsp. Tahini
  • 0.3 cup Low-fat Greek-style Yoghurt
  • 4 g Smoked Paprika

Preheat the oven to 400°F (200°C). Toss the cauliflower with 1 1/2 tablespoons of oil, Salt and pepper. Place on a baking tray and roast, turning occasionally, for 35 minutes or until tender and golden.

Meanwhile, mix chopped herbs and cumin with remaining 1 1/2 tablespoons oil and 2 tablespoons lemon juice, and toss with the chicken. Place in the oven for 20 minutes.

Stir tahini and yoghurt with remaining 1 tablespoon lemon juice.

To serve, thickly sliced chicken and arrange on plates with the cauliflower. Dollop over the tahini yogurt and dust with paprika.
