  • 0.5 cup Milk
  • 0.5 cup Whipping Cream
  • 0.5 cup White Chocolate, Melted
  • 5 oz. Whipping Cream
  • 0.5 cup White Chocolate, Melted

In a food processor, blend the peeled orange on slow speed until smooth.

With the double boiler method, pour milk, whipping cream in the bowl, stirring continuously. Add orange puree, melted white chocolate to boiled milk mixture, and continue to stir until just starts to thicken. Don’t overcook.

Remove from the heat and stir in 150g whipping cream. Place 3-inch Hemisphere Ball Cake Pan on a baking tray and pour the mixture.

Freeze for 2 hours until ready to use.

Dip your paring knife into the melted chocolate(microwave chocolate for 30 seconds. Stir in between. ) halfway up the blade, and scrape the excess chocolate off of the spine of the knife.

Rock the knife down onto the acetate sheet and back up, both with light pressure. Too much pressure will push the chocolate out to either side of the knife blade and not create the proper vacuum needed to make a thick “spine” down the center of the chocolate.

Bend the sheet to make a curl feather shape。

In a large bowl filled with hot water, dip the aluminum ball cake pan in the water for 15 seconds, and remove the Crémeux from the mold.
