Ingredients:
  • 7 oz. Coconut flakes
  • 3.5 cup Milk
  • 1 cup Flour
  • 1 cup Sugar
  • 1 tsp. Vanilla
  • 1.7 oz. Butter
  • 0.5 cup Whipping cream (33%)
  • 1.7 oz. Chopped walnuts
Directions:

Line a baking tray with parchment paper and spread the coconut flakes evenly on it. Set aside.

In a saucepan, mix together the milk, sugar, and flour. Cook over low heat, stirring constantly until the mixture thickens.

Once thickened, remove the saucepan from the heat and stir in the butter and vanilla until well combined. Pour the batter over the coconut flakes on the baking tray, spreading it out evenly.

Allow the mixture to cool for at least 4 hours, or until set.

In a separate bowl, whip the whipping cream until stiff peaks form.

Spread the whipped cream evenly over the cooled coconut mixture. Cut it into strips as per the video.

Sprinkle the chopped walnuts over the whipped cream layer. Carefully roll up the coconut mixture into a log shape, using the parchment paper to help guide the rolling process. Cut the roll into individual slices. Garnish each slice with a whole walnut on top.
