Marinated Skirt Steak

This marinated steak along with sweet potato puree, roasted broccoli and tamatillio salsa, is the meal you deserve to make yourself. All the flavors from each piece harmonize perfectly to make a perfect dinner.

Ingredients:
  • 4 ea. Skirt steak, cleaned, 8 oz.
  • Marinade
  • 2 cup ea. Ketchup
  • 1 ea. Jalapeno, sliced
  • 2 tbsp. Garlic clove, minced
  • 2 tbsp. Ginger, minced
  • 1 cup Soy sauce
  • 1/2 bu. Cilantro
  • 1/4 cup Brown sugar
  • ea. Lime juice
  • 1 large Orange juice
  • 1/2 cup Gochujang
  • For The Broccoli
  • 1 qt. Boiling water
  • 1/4 cup Salt
  • 1/2 crown Broccoli
  • 1 qt. Ice water
  • For Roasting
  • 2 tbsp. Cooking oil
  • 1/2 tsp. Salt
  • 1/8 tsp. Black pepper
  • Sweet Potato Puree
  • 1 large Purple sweet potato
  • 1 cup Maple syrup
  • 1 tsp. Cayenne
  • 1/2 tsp. Salt
  • 8 oz. Butter
  • Tomatillo Salsa
  • 24 ea. Tomatillo
  • 1/2 ea. Jalapeno
  • 1/2 bu. Cilantro, chopped
  • 1/2 bu. Parsley, chopped
  • 1/4 cup Red onion, diced
  • 1 clove Garlic
  • 3/4 cup Olive oil
  • 2 ea. Lime juice
  • 1 tsp. Salt
  • 1 tsp. Garlic clove, minced
  • 1 tbsp. Ginger, minced

Preheat oven to 300°F/150°C.

Add ketchup , soy sauce, ginger, garlic, orange, lime, brown sugar, cilantro, gochujang, and steak and allow to marinate for at least 3 hours ( up to 12 hours)

Wrap the sweet potatoes in foil and roast until completely tender. Reserve.

In a large pot of boiling water, add salt ( should be heavily seasoned).

Prep the broccoli by cutting the crown in half. Blanch for 3 minutes. Remove from the water and add to a bowl of ice water ( to stop cooking). Once chilled cut in half and reserve.

Peel the sweet potatoes, add to a large saucepan.

Add the butter, maple syrup, salt, and cayenne, and mix well.

Preheat the oven to 425°F/218°C.

Coat the broccoli with oil and season. Roast for 10 minutes.

In a large iron pan on high, sear the steak until it begins to char. About 2-3 minutes then flip. Cook for another 2 minutes and let rest on the cutting board for 5 minutes. Slice the steak against the grain.

In a medium mixing bowl, add the diced tomatillo, jalepeno, onion, garlic, cilantro, parsley, lime juice, and olive oil. Season and reserve.

To assemble. Add warm sweet potato puree, roasted broccoli, sliced skirt steak, and top with salsa.
