  • 1 cup Granulated Sugar
  • 2 Large Egg
  • 1/2 cup Olive Oil
  • cup AP Flour
  • 1 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1/2 cup Lemon, Juiced
  • 1/2 Large Lemon Zest
  • ㅤLemon Glaze
  • 3 tbsp. Lemon, Juiced Lemon Glaze
  • cup Powdered Sugar
  • ㅤGarnish
  • 1 Large Lemon Zest

Heat oven to 170°C / 325°F. Spray and line pans with parchment, if using.

Whip eggs and sugar on a KitchenAid fitted with the paddle until light and airy.

With mixer on low-medium, stream in olive oil.

Whisk together flour, baking powder, and salt.

Add dry ingredients to batter, then mix together.

Add lemon juice and zest, mixing just until incorporated.

Pour into sprayed pan, or pans, and sprinkle sugar on top if you’re not glazing the cake..

Bake until set in the center, 12-15 minutes for muffins, 25-30 minutes for an 8” cake.

Cool slightly then glaze and cut. Can be stored up to a week.

Put lemon juice in a bowl. Sift powdered sugar on top, then whisk together. When you draw a channel through the glaze, it should take 2 seconds to get smooth again.

Glaze cake once it has cooled slightly, then let sit 15-20 minutes uncovered for the glaze to dry out. Garnish with lemon zest.
