Crispy Tofu Egg Stuffed with Meat and Shrimp

Is it an egg? Is it a potato? No, guess again! You’ll be surprised that underneath the flaky crispy outer layer of batter is tofu mixed with bacon bits and other spices. It’s soft and delicious but then you’ll find inside that layer, in the center, is a ball of minced shrimp mixed with herbs and spices. It’s actually amazingly tender and juicy and is sure to be an impressive dish. With each bite more flavorful than the last, you will not be able to put these down.

Ingredients:
  • 7 tbsp. Ground pork
  • 5 tbsp. Peeled shrimp
  • 2 tbsp. Fresh fennel
  • 1 tsp. Ginger, minced
  • 1 tbsp. Shaoxing wine
  • 1 tsp. Oyster sauce
  • 1/8 tsp. White pepper
  • 1 tbsp. Egg white
  • 1/2 tsp. Salt
  • lb. Firm tofu
  • For the tofu
  • 1/2 tsp. Salt
  • 1/4 cup Bacon bits
  • 1 Large Egg yolk
  • 1 tbsp. Green onion, chopped
  • 1/8 tsp. White pepper
  • 2 cup Corn starch
  • 2 cup Corn starch
  • 4 Counts Egg wash
  • 2 cup Bread crumbs
  • qt. Cooking oil

Put ground pork in a large bowl. Mince peeled shrimps, then add into the bowl; mince the fresh fennel, then add into the bowl. Next, add seasonings into the bowl, such as minced ginger, Shaoxin wine, oyster sauce, ground white pepper, egg white, and salt. Mix well.

Grab a handful of the seasoned ground pork in your hand; squeeze a portion out through the circle formed by the thumb and index finger to make a meatball.

Pat dry tofu with a paper towel, then put in a large bowl. Add salt, minced bacon, egg yolk, ground white pepper, and cornstarch into the bowl. Mash the tofu, and mix well. Note: if the tofu is too watery, you can add some cornstarch.

Grab a handful of mashed tofu in your left hand, and spread it in the palm. Slightly bent your palm, place a meatball in the middle. Gently wrap the meatball with the mashed tofu while holding it in your palm. Exchange the meatball between your two palms to making an oval-shaped meatball that looks like a dinosaur egg.

Put cornstarch, egg liquid, and bread crumb in three bowls respectively. Coat the dinosaur eggs with a layer of cornstarch, then egg liquid, and finally a layer of bread crumbs.

In a wok over medium-low heat, bring enough oil to 180°F/80°C. Add the dinosaur eggs in the wok one by one. Deep fry for 5-7 minutes until golden and floating.
