Crispy Pork Knuckle

A chunk of tender and juicy pork on the bone, all wrapped in crispy crackling skin, this Crispy pork Knuckle is a feast for any occasion. First, scoring the pork rind all over helps the heat penetrate the fat and makes for a delicious melt in the mouth crackling. The pork knuckle is located at the end of the leg, before it becomes the ankle. It contains a lot of connective tissue and collagen, which adds all the wonderful flavor and melt-in-your-mouth texture when the meat has been slow roasted. This authentic roasted knuckle is crispy on the outside, tender and juicy inside, and well worth the effort.

Ingredients:
  • 4 lb. Pork knuckle
  • Dry Rub
  • 1/2 cup Salt
  • 1 tbsp. Whole black peppercorn
  • Marinade
  • 1 large Red onion
  • 2 stalks Celery
  • 1 stalk Carrot
  • 8 cloves Garlic cloves
  • 2 tbsp. Sugar
  • 3 slices Bay leaf
  • 1 tsp. Coriander seeds
  • 1 tsp. Italian seasoning
  • 1 tsp. Cumin
  • 2 tbsp. Apple cider vinegar
  • 1 can Beer
  • 1 tbsp. High alcohol content liquor

First, clean the knuckle, remove the hair, and filthy stuff. If there is long hair, you can burn it off with a torch.

Prick the pork skin using a spike or paring knife and create as many holes as possible to loosen the skin, so it will easily absorb flavors.

In a large bowl, rub salt and whole black pepper all over the pork knuckle. This step is very important. When rubbing, please be patient and rub repeatedly, let the salt permeate into the meat.

Then, add all the 【Marinade】, cover with plastic wrap, and marinate in the refrigerator for 3 days. (Flip the knuckle several times during marinating and don't shorten the marinating time. )

Steam the pork knuckle for 45 minutes.

Preheat the oven to 300°F/150°C, bake in the oven for 2 hours. (Tip: Bake at a low temperature first, then roast at a high temperature to make the skin crispy.)

Then, roast it at 400°F/200°C for 10-15 minutes until the skin is crispy. (Flip often during roasting to make the skin heated evenly to avoid uneven skin.)
