Ingredients:
  • 2 cups All-purpose Wheat Flour
  • 1 tsp Salt, A Pinch
  • 1 tbsp Baking Powder
  • 0.5 cup Water
  • 1 tbsp Cooking Oil
  • 3 oz Chinese Sausage
  • 2 tbsp Cooking Wine
  • 1 tbsp Garlic, Minced
  • 1 cup Red And Green Bell Pepper, Julienned
  • 1 cup Purple Cabbage, Julienned
  • 01 tsp Black Pepper, A Pinch
  • 0.75 cup Green Onion, Chopped In 1-inch Long Pieces
  • 1 tbsp Soy Sauce
  • 0.5 tbsp Oyster Sauce
  • 1 cup Basil Leaves
  • 1 cup Mungbean Sprouts
  • 1 tbsp Chef John’s Aroma Oil
  • 1 tsp Sesame Oil

Combine flour, baking powder, a pinch of salt, and a teaspoon of cooking oil.

Knead until the dough is smooth. Then cover and rest for 2 hours.

Shape the dough to a long cylinder and divide it into 4 equal pieces.

Use your palm press each dough to make thin circle pancake.

In a flat bottom pan over low heat, add one pancake, and pan-fry until it inflates. Then flips it over fry for a little bit. (Watch out, it gets burned easily at this time).

Repeat for all the doughs. Let pancake cool down for at least 15 minutes before the next step.

Roll up each pancake and cut into thin strips. Set aside. Slice sausage into thin oval-shaped slices.

In a wok/skillet over medium heat, fry the 10oz/300g pancake strips until fragrant. Remove from wok/skillet.

In the same wok, add Chinese sausage, garlic, red and green bell pepper, purple cabbage, green onion, soy sauce, oyster sauce, and black pepper. Stir several times.

Add pancake strips, and stir to mix well. Then, add mung bean sprouts, basil leaves, and sesame oil.

Add chef John’s aroma oil, and quickly stir several times. Remove from heat. Serve hot.
