Ingredients:
  • 18 oz. Beef loin top sirloin
  • ㅤMarinade
  • 1 tbsp. Soy sauce
  • 1/2 tbsp. Oyster sauce
  • 1 tbsp. Shaoxing wine
  • 1 tsp. Sugar
  • 1/4 tsp. Baking soda
  • 1 tbsp. Egg white
  • 1 tbsp. Corn starch
  • 2 tsp. Cooking oil
  • ㅤStir-fry Beef
  • 2 stalks Green onions cut Into 1/2 Inch Pieces.
  • 1/2 oz. Ginger, sliced
  • 2 tbsp. Water
  • 1 tsp. Shaoxing wine
  • 1 tsp. Dark soy Sauce
  • 1 tbsp. Light soy sauce
  • 1 tbsp. Oyster sauce
  • 1/2 tsp. Sugar
  • 2 tbsp. Cornstarch slurry (1 to 2 ratio of cornstarch to water)
  • 1 tsp. Sesame Oil

Cut the beef into slices, chop the green onion into 1-inch segments and mince the garlic.

Marinating beef: In a mixing bowl, combine beef, soy sauce, oyster sauce, Shaoxing cooking wine, sugar, baking soda and egg white. Using your hand, mix gently and thoroughly, then add corn starch. Mix again thorougly, make sure every piece of beef is coated with corn starch. Drizzle some cooking oil and mix well. This is to prevent the moisture from evaporating. Refrigerate for 20-30 minutes to let the flavor penetrate into the meat.

In a larger cooking pan over medium heat, heat enough oil to 350°F/176°C Quickly deep fry the marinated beef for 30 seconds then remove from oil and drain.

In a wok over medium heat, add a couple tablespoons of oil then add green onion and ginger. Stir fry for about 1-2 minute until fragrant. Add water (or chicken broth), dark soy sauce, light soy sauce, oyster sauce and sugar.

Constantly stir until completely mixed then add beef. Quickly stir to mix well.

Then add the slurry to thicken until every beef piece is coated with the sauce. Drizzle a few drops of sesame oil and mix well.
