Chinese BBQ Pork, known as Char Siu, is a popular way to flavor and prepare barbecued pork in Chinese cooking. It is finger licking’ good and you will be shocked at how easy it is to make it at home!

Ingredients:
- 2 oz. shallots, minced
- 1 oz. garlic, minced
- 2 tbsp. ginger, minced
- 1 tbsp. red fermented rice (fermented with Monascus purpureus)
- 1 tsp. five-spice powder
- 1/4 cup rice wine
- 1 tbsp. soy sauce
- 3 tbsp. sugar
- 1½ tbsp. Hoisin sauce
- 1 tsp. salt
- 1 cup maltose
- 3 stalks green onion
- 2¼ lb. Boston butt
Directions:

Add roughly cut shallots to a blender; blend into fine pieces. Transfer to a large mixing bowl.

Finely mince garlic and ginger in blender. Add them to the same mixing bowl.

Grind red fermented rice into a powder. Add to the same mixing bowl.

In the mixing bowl, add five-spice, rice wine, soy sauce, sugar, hoisin sauce, salt, maltose, and spring onion. Mix well.

Coat Boston butt in marinade ingredients in the mixing bowl. Leave it to marinate for 3 hours.

Preheat oven to 350°F/180°C, roast the Boston butt for 15 minutes. Then flip it over, brush with marinade, and roast for 15 more minutes or until fully cooked.

Cut the pork into strips and serve. Enjoy!

Chef John uses Boston Butt, a cut of pork that comes from the upper part of the shoulder from the front leg. You can also replace it with pork belly.
