Ingredients:
  • 5 oz. Chinese bacon
  • 7 oz. Bean curd
  • 7 oz. Green garlic
  • 3 oz. Fresh bamboo shoot (peeled and cut into small thin pieces)
  • 1 tbsp. Dried red chili pepper
  • 2 tsp. Cooking wine
  • 1 tbsp. Cooking oil
  • 1 tsp. Soy sauce
  • 0.5 tsp. Sugar
  • 0.5 tsp. Salt

Cut Chinese bacon into thin slices.

Cut bean curd into wedges.

Thinly slice green garlic.

In a cooking pot with enough water, add salt pork and bean curd, bring to a boil, and add about 1 tsp cooking wine. Keep boiling for a few minutes. Drain.

In a wok with enough oil, at low temperature add in bamboo shoot pieces deep fry till oil reaches high temperature. Then drain the oil.

Return the wok to the stove, add dried chili pepper and green garlic. Stir fry to mix well.

Add bamboo shoot and salt pork, keep stirring for a few minutes, add soy sauce, sugar and salt, quickly stir fry until mixing well.

Chinese bacon can be easily found at most Asian markets. Green garlic is young garlic with tender leaves that is harvested early in the season before the bulb is fully formed. Green garlic is more mellow and less spicy in flavor than regular garlic.
