There is nothing more satisfying than biting into a perfectly made burger with fatty avocado, creamy cheese, juicy meat, and tasty buns. Burgers are a classic meal, and making an especially delicious one is great to add to your repertoire.

  • cup Bread Flour
  • 1 tsp. Salt (1 Tsp. Table Salt, If Using)
  • 2 tbsp. Sugar
  • 1/4 cup Milk
  • 1/2 cup Warm Water
  • 2 Large Egg
  • tsp. Dry Yeast
  • 2 tbsp. Butter
  • Spray Oil
  • 2 tbsp. Bread Crumbs
  • 1 Large Egg
  • 1 tbsp. White Sesame Seeds
  • Pickled Red Onions
  • 3/4 cup Red Wine Vinegar
  • 3/4 cup Water
  • 1 tbsp. Granulated Sugar
  • 1 tsp. Salt
  • 1 Large Red Onion
  • 2 lb. Ground Beef 80/20 Ground Beef (20% Fat)
  • 1 tbsp. Salt
  • 1/2 tsp. Ground Black Pepper
  • 1 tsp. Cooking Oil
  • 2 slices Cheese
  • 2 tbsp. Butter
  • 1 sprig Rosemary
  • Assemble
  • 1 tsp. Mayonnaise
  • 1 tsp. Dijon Mustard
  • 3 slices Lettuce
  • 2 slices Tomato
  • 6 slices Avocado

【Burger Brioche】Whisk together milk, water, and yeast to activate the yeast. Make sure there are no clumps.

Mix with eggs.

In the mixer, add flour, salt, sugar, and mixed liquid.

Mix to form a dough, then knead until elastic.

Add in butter, then continue to knead until smooth, shiny, and no pieces of butter remain.

In a lightly oiled bowl, rise to double. Depending on how warm your kitchen is, this will take about 1-3 hours.

Cut into seven evenly sized pieces (3.75-4 oz. per piece).

Shape into a ball.

Sprinkle a baking sheet lightly with cornmeal or breadcrumbs, then put buns on cornmeal, leaving 2-3 inches in between.

Cover lightly with plastic wrap, then press the buns down. Proof: let it rise (for 1-2 hours) to doubled in size.

Whisk egg until it starts to foam, then brush it on the buns.

Sprinkle white sesame seeds.

Bake in 350°F / 180°C oven until golden brown for about 15 minutes, rotating the tray halfway through baking.

【Pickled Red Onions】In a saucepan, heat to a boil: red wine vinegar, water, sugar, and salt.

Put onions in a heat-proof container. Strain liquid over onions.

Press parchment to the surface to submerge onions, and cool to room temperature. (Cover and store in the refrigerator for up to two weeks.)

【Burger】Mix ground beef, salt, and pepper together.

Shape burgers into six patties. (If you have a ring mold to shape, that’s even better.) Make a small divot in the center of each patty.

To cook, heat a cast-iron skillet (or grill) until hot. Put burgers in the pan leaving room in between them to allow steam to escape, and lower heat to medium-high.

Once you flip the burger, add the butter and herbs (be careful, the herbs may splatter) and baste the burger until it reaches your desired temperature. (The health department recommends 70°C / 158°F. Rest 5 minutes, then serve.)

Cut the baked buns and spread mayonnaise and dijon mustard on the bun.
