Ingredients:
  • 9 oz. Core the Shanghai bok choy
  • Blanch the Bok Choy
  • 2 qt. Water
  • 1/4 tsp. Salt
  • 1/8 tsp. Baking soda
  • Stir-fry Bok Choy
  • 1/2 tbsp. Cooking oil
  • 1 cup Chicken broth
  • 1/8 tsp. Ground salt
  • 1/2 tsp. Sugar
  • tbsp. Potato starch slurry(1 to 2 ratio of cornstarch to water)
  • 1 tsp. Cooking oil
  • Stir-fry Mushrooms
  • 7 dried Shiitake mushrooms, soaked and sliced
  • 1 tbsp. Cooking oil
  • 1 cup Chicken broth
  • 1 tbsp. Oyster sauce
  • 1 tsp. Soy sauce
  • 1/2 tsp. Sugar
  • 1/8 tsp. Ground salt
  • tbsp. Potato starch slurry(1 to 2 ratio of cornstarch to water)
  • 1 tsp. Sesame oil

Soak the shiitake mushrooms for 2 to 3 hours, then slice them. Clean the Shanghai bok choy heart for later use.

Fill a pot with water and bring to boil. Add salt and baking soda to keep the vegetable green. Put in the bok choy heart for 20 to 30 seconds, then remove it and place in ice water; drain the water from the pot.

Pour some oil into a medium pan and set over medium-high heat. Add in the bok choy heart, chicken broth, salt, and sugar.

When it boils, add in the watery potato starch. Before removing it from the pan, add in a little bit of oil to increase its brightness.

Pour some oil into another pan and set over medium-high heat.

Add in the mushrooms and stir-fry for 1 to 2 minutes. Add chicken broth, oyster sauce, soy sauce, sugar, salt, and watery potato starch then mix well. Before putting it on the plate, add a little bit of sesame oil.
