Ingredients:

Dough
1¾ cup All-Purpose Flour
1/2 tsp. Kosher Salt
1/2 cup Warm Water
Butter Layer
6½ oz. Unsalted Butter
3 tbsp. All-Purpose Flour
1/4 tsp. Salt
*2 tbsp. All-Purpose Flour
Topping
4 tbsp. Unsalted Butter
1/2 cup Brown Sugar
1/2 tsp. Kosher Salt
1/2 large Lemon, Juiced
3 large Apple

Directions:

Step 1

【Dough】Combine flour, salt, and water in a mixer fitted with the paddle or in a bowl.

Mix together, then knead 5-8 minutes until dough is smooth.

Remove the dough from the mixer and wrap. Rest and chill dough 30 minutes to overnight.

【Butter Layer】Mix butter and flour together in the bowl of a stand mixer fitted with a paddle or in a bowl with a wooden smooth. Mix until smooth, but don’t aerate.

Using plastic wrap or parchment paper, shape butter mixture into a 6” x 6” square.

If the butter isn’t soft, do the first turn: roll dough to 6” x 16”, then fold in thirds like a letter. Repeat for a second turn, then chill in the fridge 30 minutes. Repeat twice, for a total of 6 turns, resting in the fridge between every two turns.
