Teppan Style Kung Pao Chicken

Who needs a wok! Have fun in your backyard with this chicken stir fry dish. The aromas will fill the air and you will have a more intimate connection with your guests whilst you impress them with this Teppanyaki cooking style, at home on your BBQ grill.

Ingredients:
  • 1⅓ lb. Boneless skinless chicken thighs
  • Marinade
  • 1/8 tsp. Salt
  • tbsp. Shaoxing wine
  • 1/2 tsp. Sugar
  • 1 tbsp. Light soy sauce
  • 1 tbsp. Corn starch
  • 1 large Egg
  • Sauce
  • tbsp. Light soy sauce
  • 1 tbsp. Oyster sauce
  • tbsp. Sweet black rice vinegar
  • 1 tbsp. Sugar
  • 1/8 tsp. White pepper
  • 1/8 tsp. Salt
  • 2 tbsp. Water
  • 2 tbsp. Cornstarch slurry (1 to 2 ratio of cornstarch to water)
  • Sichuan Peppercorn Oil
  • 1/2 cup Cooking oil
  • 1/4 cup Sichuan peppercorn
  • 1/2 cup Dried cayenne pepper
  • For Stir-fryㅤ
  • 1/2 cup Dried cayenne pepper
  • 5 cloves Garlic, sliced
  • 1/2 oz. Ginger, sliced
  • 1 tsp. Shaoxing wine
  • 1 tsp. Chef made chili oil [see 'chef john's signature oils' video]
  • 1/2 cup Roasted peanuts
  • 3 stalks Julienne green onion

Beat the boneless skinless chicken thighs with the end of the knife, so that the flavor of seasonings can penetrate into the meat easily. Cut into strips firstly, then cut into small pieces. (Compared with other parts of the chicken, chicken thighs taste better.)

Marinate the chicken thighs with【Marinade】and mix them evenly. (When marinating chicken thighs, do not add too much cornstarch, it is better to add pepper oil to moisturize.)

Prepare the cooking sauce: mix all ingredients【Sauce】a bowl, mix evenly, then set aside.

Preheat the iron griddle, meanwhile, add cooking oil in a cast-iron pot, add Sichuan peppercorn stir fry slowly to cook the peppercorn oil. (When cooking the peppercorn oil, please use medium oil temperature, because the peppercorn will be burnt by high-temperature oil.)

Drizzle the peppercorn oil over the iron griddle several times, add the marinated chicken thighs, dried cayenne pepper, garlic slices, ginger slices, stir fry about 2 minutes.

Add dried cayenne pepper to peppercorn oil.

Then add the Shaoxing wine, Chef made chili oil, peppercorn oil, and mix well, after that, add 【sauce】and stir fry evenly.

Finally, sprinkle roasted peanuts and green onion strips, mix evenly.
