Ingredients:
  • 1 Whole chicken
  • 1/2 lb. Spinach
  • 1/2 Onion
  • 3 cloves Garlic
  • 1/2 cup Mushrooms
  • 1/2 cup Chicken broth
  • 1 cup Cheese of your choice
  • 1/3 cup Milk
  • 2 tbsp. Olive oil
  • 1 1/3 tbsp. Unsalted Butter
  • 1 tbsp. Paprika powder
  • Salt and pepper, to taste
Directions:

Debone the whole chicken, make it flat on the table, rub and season with salt and pepper, then set it aside.

Take your onion, garlic and mince it, slice the mushrooms too. Remember to set aside ⅛ cup of garlic and 1 clove of garlic aside for later.

Heat up the skillet to medium-high heat, add your olive oil, minced onion, minced garlic, mushrooms and spinach. Stir fry for a while. Transfer the mix to the bowl.

Wrap the veggies in the chicken. Use Butcher’s twine to tighten the chicken and veggie bundle. Seasoning the whole thing with salt and pepper.

In a large pan, heat up the butter, then put the stuffed chicken in and cook all sides until golden brown.

In the same pan, add your remaining minced onion, minced garlic, chicken broth and milk. Seasoning with paprika powder. Cook for about 5 minutes and transfer the chicken to the oven.

Roast the stuffed chicken at 375°F/190°C for 20 minutes.
