Ingredients:
  • 4.5 lb Salmon
  • 0.75 cup Sea Salt
  • 0.5 cup Brown Sugar
  • 2 tsp Pepper
  • 1.5 cup Rice
  • 0.5 cup Brown Sugar
  • 4 sprig Thyme
  • 1 tbsp Sage
  • 0.25 cup Orange Peels
  • 1 count Avocado
  • 1 count Mango
  • 0.5 cup Cherry Tomato
  • 1 count Lemon
  • 1 pinch Salt to taste
  • 1 pinch Pepper to taste
  • 0.1 cup Olive Oil
  • 0.25 cup Mozzarella Cheese
  • 1 tbsp Pine Nuts
  • 1 cup Arugula

Marinate salmon with sea salt, brown sugar and pepper for overnight.

Wash off the marinade mixture from the salmon with water. Cut salmon into 3 portions.

Put a tin foil under a wok. Add rice, brown sugar, thyme, sage and orange peel onto the tin foil. Place the salmon on top of the mixture. Smoke for 30 minutes.

To make salad: Mix chopped avocado, mango, cherry tomato, Arugula and lemon juice, pine nuts together. Seasoning with Salt, pepper, Olive oil, Mozzarella cheese.

Place the smoked salmon on top of the salad. Serve and enjoy.
