Ingredients:
  • Pasta
  • 8 oz. Rotini pasta
  • 1 tsp. Salt
  • Salmon
  • 1 lb. Salmon
  • 1/4 tsp. Salt
  • 1 pinch Cracked black pepper
  • 1 tbsp. Olive oil
  • Cream sauce
  • 3 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes in oil, chopped
  • 1/8 tsp. Red pepper flakes
  • 5 oz. Spinach, shredded
  • 1 cup Heavy cream
  • 1/4 tsp. Paprika
  • 1 pinch Pepper

Add the dried pasta to a boiling pot of salted water and cook for approximately 8 minutes, drain and set aside.

Season the salmon with salt and pepper. Add oil to a medium heat skillet, place the salmon face and sear until lightly golden for approx 4 -6 minutes or until cooked approximately 1/3 way in. Turn the salmon skin down and sear for a few minutes. Remove from the heat.

To make the sauce gently cook the garlic in a little oil for 1 minute. Add the sun-dried tomatoes chili pepper flakes. Next, add the spinach and cook until it wilts, approx 2-3 minutes. Add the cream and reduce it a little. Sprinkle a little sweet paprika and black cracked pepper.

Add the cooked pasta to the sauce cook for 1-2 minutes tossing together. turn off the heat and serve in a bowl

Flake the salmon into chunky pieces incorporating half into the pasta and sauce mix, leaving the other half of the salmon to take precedence on the top of the dish.
