  • RED VELVET SPONGE CAKE
  • 0.7 cup Sugar
  • 1 cup Flour
  • 0.1 cup Cocoa powder
  • 01 tbsp. Vanilla extract
  • 2 tbsp. Raspberries

Preheat the oven at 410°F/210°C. Separate egg white from egg yolk. Whisk the egg yolks with the sugar in bain-marie

Add the vanilla extract and the red food coloring and whisk.

Sift the flour and cocoa powder and add and blend with a spatula. Whisk the egg white to a firm texture and gently add it into the batter.

Pour in cookie sheet pan covered with parchment paper. Bake 7-8 min

Turn the cake on a wet towel and roll it with the towel. Cool down.

Unroll the cake and roll it with the cream filling. Cover the outside with whipped cream.

Roll the cake in coconut shreds to cover the full outside. Cut the edges.

Decorate with raspberries, hazelnuts, white chocolate, gold chocolate balls and golden flakes.
