Ingredients:
  • 2 lb. Pork Rib, Cut Into 1 inch Small Pieces
  • 2 lb. Chestnut
  • 1 tbsp. Cooking oil
  • 2 oz. Rock Sugar
  • 4 tbsp. Soy Sauce
  • 1 tbsp. Cooking Wine
  • 1 tbsp. Vinegar
  • 2 piece Star Anise
  • 2 oz. Garlic Cloves
  • 3 oz. Red Bell Pepper
  • 0.5 tbsp. Green Onion

In a large cooking pot, add water and rib pieces, bring to boil.

Drain water.

To remove chestnut shell: cut a “X” on chestnuts shell.

In a large cooking pot, add water and chestnuts bring to boil and continue to cook for about 30 minutes.

Drain and drop chestnuts in ice water.

Soak about one minute then peel off shell and skin.

In a large skillet, at medium temperature, add cooking oil and rock sugar, stir until sugar is melted and turn into brown color.

Stir in rib pieces till they turn brown, add soy sauce, vinegar, cooking wine and star anise, continue cooking till flavors get into ribs.

Transfer rib to a clay pot, add water, chestnuts, mix well, bring to boil. Lower heat to medium. Simmer for about 20 minutes.

Add red bell pepper, simmer for another 10 minutes.
