Easy Bacon and Pepper Stir-fry | Chef John’s Cooking Class

Ingredients:
  • 1 tbsp. Cooking oil
  • 5 oz. Pancetta
  • 1/8 tsp. Ground black pepper
  • 1 tsp. Shaoxing wine
  • 1 tbsp. Garlic, minced
  • 1/2 tsp. Suger
  • 1/2 cup Salted chicken stock
  • 1 tbsp. Oyster sauce
  • 1/2 large Onion
  • 1 stalk Leek
  • 2 medium Green and red bell pepper

Cut Pancetta into thin slices. Cut leek into small pieces. Cut bell peppers into triangle-shaped pieces. Cut onion into square-shaped pieces.

In a cooking pan over medium-low heat, add oil, as the oil becomes hot add Pancetta slices, evenly spread the meat pieces, add back pepper and stir fry until fragrant and fully cooked. Add Shaoxing cooking wine, and minced garlic, fry until fragrant. Add sugar, chicken broth, oyster sauce, onion, stir for about 30 seconds, add bell peppers, leek,quickly stir to mix well. It's done.

Note: the meat should not be cut too thick, otherwise, it will be hard to cook through and too salty. Cook the meat thoroughly until fragrant and greasy.
