Ingredients:
  • 10.5 oz. All-purpose flour or bread flour
  • 1 Large Egg
  • 1 tsp. White sugar
  • 1 tsp. Dry yeast
  • 1/2 tsp. Salt
  • 0.6 cup Water
  • 2 tbsp. Olive oil
  • Filling:
  • 1 tbsp. Olive oil
  • 2.82 oz. Green onion
  • 1/2 tsp. Black pepper
  • 1/2 tsp. Salt
Directions:

Mix water, yeast, and sugar. Mix well and let sit for 5 minutes.

Whisk one egg and set aside.

Mix flour with salt.

Add the liquid ingredients. Pour in the egg.

Add olive oil. Mix until there is no more dry flour. Cover and let it sit for 30 minutes.

After 30 minutes, wet your hands a little and 1st-time-stretch & fold. Pull the dough from the edges and fold it into the center. Stretch & fold it about 8-9 times. Cover and let the dough rest for 30 minutes. After 30 minutes, continue to stretch & fold the dough the same as the first time. Cover and let the dough rest for 30 minutes. After 30 minutes, stretch and fold for the last time. Flip over the dough. Cover and let the dough rise until double size.

Sprinkle some dry flour on top of the dough. Deflate the air bubbles. Dust some flour on the board. Fold the dough into a circular shape. Flatten the dough. Divide into 12 equal pieces.

Take a piece of the dough and fold it until it's smooth. Pinch the bottom of the dough and roll it into a round shape. Repeat with the other pieces of dough and when you are done, cover and let the dough sit for 15 minutes.

Cut the parchment paper a little bigger than the pan size.

Take 3 green onion bunches. After washing them, dry with a paper towel and chop them. Add black pepper and salt. Mix well.

Take a piece of the dough. The smooth side of the dough faces the bottom. Flatten the dough. Add some green onion mix. Fold in half. Then, fold it like this. This super-easy bread is done!

When you are done, place in the pan. My pan size is 28cm. Cover and let it rise until double size (30 minutes).

Brush the leftover egg. Sprinkle some sesame seeds (optional). Put in a preheated oven at 356 °F/180 °C and bake for 25 mins.
