Chocolate Meringue Cake

Ingredients:
  • Dried meringue
  • 10 Large Egg whites
  • 1 tbsp. Vinegar
  • 14.1 oz. Granulated sugar
  • Filling
  • 10 Large Egg yolks
  • 2.4 cup Milk
  • 10 tbsp. Sugar
  • 7 tbsp. Flour
  • 7 oz. Dark chocolate
  • 7 oz. Butter
  • 0.7 cup Whipping cream
Directions:

Preheat oven to 300 °F/150 °C.

Prepare the meringue: Put egg whites in one large bowl and start stirring with a mixer. When you start to stir, add sugar slowly. The whipping time is 10 minutes. After beating the egg whites, add the vinegar and stir for another minute.

Line the baking tray with baking paper, lift it to the edges and make a paper partition in the middle so that you don't have to cut the crust later, just take them out. Distribute the whipped egg whites in both compartments and align.

Put the pan in the oven and keep it for 15 minutes at 300 °F/150 °C. Then reduce to 248 °F/120 °C and dry for 20 minutes, if a minute longer is even better, just don't do it shorter. After that time, dry the bark at 212 °F/100 °C for another hour and a half. Remove the dried crusts from the oven and leave them in the tray to cool.

In a large bowl, Add flour to the yolks. And the sugar. And also a little bit of milk.

In a small pot, pour the rest of the milk and put the pot on the stove to boil. Mix the yolk, flour, and milk mixture, and when you have mixed it put it in the milk when it boils.

Mix it at medium heat until it hardens. The filling is done. And remove it from the stove.

Pour the hot filling over the chocolate. Mix it a little bit. And then, mix it with a mixer. So that the chocolate combines better with the filling. Put foil or a plastic bag over it and let it cool down.

Now that the filling is done add softened butter and mix it. The filling is done.

In another bowl, put the whipping cream. Whisk it.

On the crust, layer and add half of the chocolate filling. Add half of the whipped cream onto the filling layer. On the whipped cream, carefully put the second cake crust.

Again put the other half of the chocolate filling. And on top of that add whipped cream. The cake is done all that is left is to decorate. it's by your liking. And also let it chill.
