Ingredients:
  • 28 oz. Soft flour + for sprinkling and mixing
  • 1.4 cup Warm water
  • 0.35 cup Oil
  • 0.35 oz. Dry yeast
  • 1 tbsp. Sugar
  • 1 tbsp. Salt
  • 2 Large Eggs
  • 1 tbsp. Milk
  • 16 Cheese Sticks of choice
Directions:

Prepare Egg Wash: Separate one egg yolk and pour milk over it. Set aside for later use.

Activate the Yeast: In a small bowl, combine the dry yeast, sugar, and one tablespoon of flour with a little warm water (about 150 ml). Allow it to sit and activate for 10-15 minutes.

Prepare the Dough: In a larger mixing bowl, place half of the flour (about 400 g). Add the activated yeast mixture, the remaining warm water, most of the oil, and two egg whites and yolks. Mix well.

Gradually add the remaining flour and knead the dough until smooth and elastic.

Pour the remaining oil over the dough, ensuring it is coated evenly. Cover the bowl with a cloth and let the dough rise in a warm place for about an hour.

Shape and Fill the Rolls: After the dough has risen, transfer it to a floured work surface. Gently knead the dough to release any air bubbles, but do not over-knead.

Divide the dough into equal-sized portions.

Shape each portion into a ball, then place them on a floured surface.

Take one dough at a time and roll it out in a circle, as much as the dough allows, do not force. If he doesn't want to stretch and returns a lot, leaves him to rest for 10 minutes, and only then stretch.

Cut the resulting circle into triangles. Bigger triangles - bigger rolls.

Fill with cheese sticks as desired. If you add small cheese, be sure to salt it, feta is also excellent.

Roll up the rolls and place them on a greased baking sheet.

When you fill the first tray, cover it with a cloth, then let it stand while you roll out the rest of the dough, for about 20-30 minutes.

When you are done with the rest of the dough, the first tray is ready for applying egg wash. Whisk together the milk and egg yolk set aside earlier. Brush the egg wash over the risen rolls.

Sprinkle with sesame, flax, cumin, or whatever you like.

Bake the Rolls: Preheat the oven to 390°F/200°C. Bake the rolls for 25 minutes, or until golden brown and cooked through.

Once baked, remove the rolls from the oven and let them cool slightly on a wire rack.
