Ingredients:
  • 1 tbsp. Dragon Well Green Tea
  • 3 cup Hot Water, 80 °C/ 176 °F
  • 5 cup Ice Water
  • 1 lb. Tiger Prawns/Shrimps
  • 1 tsp. Salt
  • 1 count Egg White
  • 1 tsp. Corn Starch
  • 1 tsp. Cooking Oil
  • 1 tsp. Salt
  • 0.5 tsp. Sugar
  • 3 tbsp. Cornstarch Slurry

Pour 1.5 cup hot water into a teacup to warm up the cup. Then discard the water.

Add tea leaves and 1.5 the hot water into the teacup and let it steep for 5 minutes, then filter out the tea leaves.

In a mixing bowl, combine ice water and hot tea. Wait until all ice cube dissolved. Save 1 tablespoon tea for later use.

Add shrimps into the tea, refrigerate for 2 hours. Then drain.

In a mixing bowl, combine prawns, salt, egg white, corn starch, and cooking oil. Toss to mix, then refrigerate for 2 hours.

In a skillet over high heat, oil blanching shrimps at 120 °C / 250 °F. Drain.

Return skillet to stove, add 1 tablespoon tea, salt, sugar, cornstarch slurry, and the prawns.

Quickly Stir fry until the prawns are well coated with sauce.
