Doubletree Hotel’s secret cookie recipe has been revealed!

A few days ago, the Doubletree by Hilton hotel also unveiled their chocolate chip cookie recipe, which has been their secret recipe for a long time. This cookie is a welcome cookie provided by the reception upon check-in if you stay at a Doubletree hotel. They keep it warm and hand it over, and the taste is really amazing.

Ingredients:
  • 3.9 oz. Unsalted butter
  • 2.9 oz. Granulated sugar
  • 2.7 oz. Brown sugar
  • 1.7 oz. Eggs
  • 0.1 oz. Vanilla extract
  • 1/4 tsp. Lemon juice
  • 5.7 oz. Plain flour
  • 0.8 oz. Rolled oats
  • 1/2 tsp. Baking soda
  • 0.1 oz. Salt
  • 8.4 oz. Semi-sweet chocolate chips
  • 3.8 oz. Baked chopped walnuts
  • A pinch of cinnamon powder
Directions:

Lightly soften the butter with a hand mixer at room temperature.

Add granulated sugar, brown sugar, and salt and whisk for about 1 minute at medium speed with a hand mixer. (In the original recipe, it is said to be 2 minutes at medium speed, but it is enough to whip for 1 minute. Be careful that over whipping spreads the cookie and looks ugly)

Add egg, vanilla extract, and lemon juice at room temperature and whisk for 1 minute at medium speed.

Sift flour, baking soda, and cinnamon powder and fold with a spatula.

When there is some powder remaining, add chocolate chips, walnuts, and oatmeal and mix evenly. (The walnuts were pretreated and used: boiled in boiling water and then baked for 2 hours at 212 °F/100 °C to completely remove moisture)

Pan with a 50mm diameter scoop. If you don't have a scoop, divide it into rounds of 50g each. (The scoop size is slightly smaller than the original recipe).

Press the top slightly to flatten it, and bake it in a preheated oven at 300 °F /150 °C for 16 minutes.
