Crunchy Korean Fried Chicken

Everyone knows that Korean fried chicken is very tasty, but nothing can be compared to crunchy Korean fried chicken, Dakgangjeong! By frying at home, it’s much healthier than fast food! Crispy, juicy chicken legs, and sweet, spicy glaze sauce, you can’t stop your hands from Dakgangjeong.

Ingredients:
  • 17.6 Oz. Boneless chicken thighs
  • 1/2 Cup Milk
  • 15 Pieces Peanuts (optional)
  • Vegetable oil for frying
  • Seasonings:
  • 1 Tbsp Cooking wine
  • 1 Large Egg white
  • Salt
  • Pepper
  • Batter:
  • 5 Tbsp Potato starch or Corn starch
  • 6 Tbsp Frying powder
  • Soy Sauce Mixture:
  • 6 Tbsp Starch syrup
  • 3 Tbsp Soy sauce
  • 4 Tbsp Cooking wine
  • 1 Tsp Minced garlic
  • 1/4 Tsp Ginger powder
  • Pepper
Directions:

Let chicken legs in a milk bath for 5 min and rinse. Cut chicken legs into bite-sized pieces, season with seasoning ingredients, and marinate for 10 mins. Chop peanuts roughly.

Combine dry mixture ingredients in a bowl, dip chicken legs into the mixture to coat.

Add enough oil in a pot, heat to 338 °F/170 ℃, and fry chicken legs until golden brown on the outside. (To make it crispier, fry once again on high heat.)

Heat another pot and add soy sauce ingredients. Simmer until it starts to boil, dip fried chicken legs until they are evenly coated. Sprinkle with peanuts to serve.

Transfer chicken to a plate and serve.
