Crispy Shrimp Zucchini Balls

This picturesque dish is just pretty and colorful. It is like artistic eggs sitting in a nest of curly fried carrots, and it tastes as good as it looks!

Ingredients:
  • 3 medium Zucchini
  • tsp. Salt
  • 4 cup Cooking Oil
  • 1 large Carrot
  • 1 medium Potato
  • 2 tbsp. Cornstarch
  • 2 tbsp. Shallot
  • 2/3 cup Shrimp
  • 1/4 cup Bread Crumbs
  • 1/4 cup Cheese
  • 2 medium Eggs
  • 1/8 tsp. Salt
  • 1/8 tsp. Black Pepper

Wash zucchini. In a medium-size bowl, grate zucchini with skin. Add salt and mix well. Let sit for 10 minutes. Squeeze out all the moisture from the zucchini, set aside.

In a large frying pan, add approximately 4 cups of oil, or enough to fill half of the pan, and heat to 170°F / 75°C. Meanwhile, cut tops off of carrots and peel, then julienne carrots into thin strips, so thin you can almost see through them.

Deep fry until the carrots curl up.

Peel and julienne potato the same way as the carrots.

Place potato strips into a bowl of water, then squeeze water out of potato slices and place on a towel, and pat dry thoroughly.

Place in a baking dish to sprinkle cornstarch on top of the potato. Mix with hands, set aside.

Place paper towel on a plate. Remove fried carrots from oil and place on a paper towel, set aside.

Dice shallots. Deveined raw shrimp and cut into pieces. Place in a baking dish the shallot, shrimp, bread crumbs, grated cheese, salt, and black pepper.

In a small bowl, whisk 2 eggs. Squeeze remaining water out of zucchini. Place zucchini in with shrimp mixture, and mix well.

Roll into 5 balls and place in eggs to coat, then pack shredded potato slices around each ball.

Deep fry until the breadcrumbs turn golden brown.

Serve the shrimp and zucchini balls on top fried carrots. Enjoy!
