Ingredients:
  • Qt Water
  • 1 whole Whole chicken
  • 1 tbsp. Dried goji berries, soaked in 1cup of water.
  • 1 tbsp. Shaoxing wine
  • 3 slices Poria cocos mushroom
  • 1/4 cup Dried jujube
  • 1/4 cup Lotus seed
  • 5 oz. Chinese Yam
  • 1 tsp. Sea salt

Cut the whole chicken into four equal pieces, or small pieces depending on preference. (Thoroughly clean the chicken. It's unnecessary to dip the chicken in the boiling water, but you must remove the foam after boiling.)

Peel the Chinese Yam (or nagaimo) and cut it into long strips. (You must wear gloves while peeling the yam to prevent any potential allergic reactions. )

Bring the water to the boil in a casserole pot, then add in the chicken.

When it boils, use a filter net to remove the foam on the surface.

Soak the dried goji berries for later use.

Then add dried jujube, Shaoxing cooking wine, Poria cocos mushroom, lotus seeds, and nagaimo. Cover the pot and set it over low heat. Simmer for 90 minutes.

Add in the goji berries and sea salt. (The ingredients can be adjusted, but the goji berries must be soaked and added into the soup at the end.)
