Ingredients:
  • 2 large Eggs
  • 3 oz. Minced Shrimp
  • 3 oz. Ground Pork
  • Marinade 1
  • 1 tbsp. Minced Ginger
  • 1 tsp. Minced Green Onion
  • 1 tbsp. Minced Carrot
  • 1 tbsp. Minced Cilantro
  • 1 tbsp. Minced Red Bell Pepper
  • 1 tbsp. Shaoxing Wine
  • 1 tsp. Salt
  • 0.25 tsp. White Pepper
  • 1 count Egg
  • 8 oz. Chicken legs 
  • Marinade 2
  • 1 tbsp. Shaoxing Wine
  • 0.5 tsp. Sugar
  • 0.5 tbsp. Oyster Sauce
  • 0.25 tsp. White Pepper
  • 0.5 tsp. Salt
  • 1 tbsp. Corn Starch
  • 3 oz. Shiitake mushroom

Make egg crepe with 2 eggs in a flat pan at low heat.

Add minced shrimp, ground pork, minced ginger, chopped green onion, minced carrot, chopped cilantro, chopped red pepper, Shaoxing wine, salt, white pepper powder, and an egg in a bowl. Stir and mix well with hand.

Spread the meat mixture on the egg crepe evenly.

Roll the egg crepe up like making egg rolls.

Steam it for 10 minutes.

Slice the roll-ups into small round pieces for about 1/4-inch (0.6 cm) thick.

Arrange the slices around the inside of the bowl.

De-bone the chicken leg quarters and finely chop into small pieces.

In a large bowl, mix the chicken meat with Shaoxing wine, sugar, oyster oil, White pepper, salt, corn starch, and chopped shiitake mushroom. Marinate for 1 to 2 hours.

Add the marinated chicken mixture in the center of the bowl covering the egg rolls.

Steam for 30 minutes.
