Ingredients:
  • 3 lb. Chicken thighs
  • 2 tbsp. Full-Fat Yogurt
  • 9 cloves Garlic
  • 1 tbsp. Ginger
  • 3 tbsp. Olive oil
  • 1 cup White Onion
  • 1 cup Chopped Potato
  • 2 cup Chopped Tomato
  • 2 tbsp. Tomato paste
  • 2 cup Chicken broth
  • Spice blend
  • 2 tbsp. Salt
  • 1 tbsp. White Pepper
  • 1 tbsp. Ground Cumin
  • 1 tbsp. Smoked Paprika
  • 1 tbsp. Ground Turmeric
  • 1 tbsp. Coriander
  • 1 tbsp. Curry powder
  • 1 tbsp. Cayenne
  • For the Nann
  • 2 tbsp. Sugar
  • 1 tbsp. Dry Yeast
  • 4 cup All-purpose Flour
  • 1 tbsp. Salt
  • 1 cup Full-fat Yogurt
  • 1 cup Whole milk

[For the Chicken Curry] Clean and debone the chicken thighs. Slice into strips and transfer to a large bowl. Add minced garlic, ginger, and yogurt. In a small bowl, combine salt, white pepper, ground cumin, paprika, ground turmeric, coriander and cayenne. Add half of the spice blend to the chicken.

Make sure the meat is well combined and coated with spices. Transfer to an oven safe pan, grill at 450°F / 232°C for 15 minutes.

In a large pan, sauté minced garlic, potato, onion, and tomatoes. Season with the rest of the spice blend. Once everything is combined, add chicken broth and simmer for 15 minutes.

Add grilled chicken and simmer on low heat.

Enjoy the curry with Naan bread, garnish with cilantro.

[For the Naan] In a large bowl, mix flour, dry yeast, salt, sugar, and a blend of yogurt and milk. Knead into dough, cover and rest for an hour.

Separate dough into quarters, then fold the dough onto itself a few times before rolling it out.

Heat a large skillet over medium-high heat, and place the dough in. Wait for the dough to rise, then flip to cook the other side. Once it's brown and crispy on the edges, transfer to a plate to cool. Repeat for the rest of the dough.
