Chicken and Wheat Gluten Stir Fry

The star of this dish is wheat gluten, also known as kao fu in Chinese, which is steamed to create a spongy airy texture that is pleasant to chew and absorbs sauce and flavors.

Ingredients:
  • 5 oz. Chicken Breast, Boneless and Skinless  
  • 0.25 tsp. Salt [Marinade]
  • 1 tsp. Water [Marinade]
  • 1 count Egg White [Marinade]
  • 1 tsp. Corn Starch [Marinade]
  • 1 tsp. Cooking Oil [Marinade]
  • 2 oz. Dried Black Fungus  
  • 2 oz. Shiitake Mushroom
  • 8 oz. Dehydrated Gluten(Wheat Gluten), (See "How to Make Dehydrated Gluten(Wheat Gluten)" Video. Can Be Purchased From Asian Supermarkets)     
  • 1 oz. Green Onion, Chopped
  • 2 oz. Winter Bamboo Shoot, Thinly Sliced
  • 1 oz. Citron Daylily
  • 1 tbsp. Chef Made Green Onion Oil (See "Chef John Signature Oil" Video)
  • 1 tbsp. Shaoxing Wine
  • 0.5 tbsp. Oyster Sauce
  • 0.5 tbsp. Soy Sauce 
  • 0.5 tsp. Sugar 
  • 2 cup Water
  • 1 oz. Red and Green Bell Pepper, Chopped
  • 1 tbsp. Water + Corn Starch (a mixture of one part starch and 2 parts water)
  • 1 tsp. Sesame Oil

Cut the chicken into 1/8-inch (0.4 cm) thin slices.

In a medium bowl, combine chicken with oil, salt, egg white, and starch. Toss to coat evenly.

Soak dried black fungus, shiitake mushrooms, and dehydrated gluten in water for 1 hour in separate bowls.

Bring a pot of water to boil, add softened gluten, and keep boiling for a few minutes. Remove from boiling water and squeeze to dry. Set aside.

In a wok, bring enough cooking oil to 250-300°F/120-150°C. Quickly blanch the chicken in the oil. Then drain.

Return the wok to the stove, add green onion, ginger, shiitake mushroom, black fungus, and bamboo shoots. Stir fry several times.

Add chick, oyster sauce, soy sauce, sugar, water, gluten pieces, red and green pepper, slurry to thicken, and sesame oil.

Stir-fry until completely mixed.
