Beef Short Ribs in Pho Style Broth With Mushrooms

A perfect and simple soup for the colder season. The king mushroom pairs so well with the short rib steaks. Gently braised in the clear broth, infused with a whole bundle of aromatics, this wonderful soup has subtle and warming flavors that are very comforting during a cold winter’s night.

Ingredients:
  • For The Ribs
  • 1 tbsp. Vegetable oil
  • 4 pice Short ribs
  • 1/4 tsp. Salt
  • For The Mushrooms
  • 1/4 tsp. Salt
  • 3 ea. King oyster mushrooms, sliced
  • Spices
  • 1 ea. Garlic
  • 2 ea. Ginger
  • 3 slices Bay leaves
  • 1 tbsp. Fennel seed
  • 10 ea. Cloves
  • 4 ea. Star anise
  • 2 ea. Cinnamon sticks
  • 1 qt Chicken stock
  • 1 tbsp. Sugar
  • 1 tsp. Fish sauce
  • Garnish
  • 5 pice Mint
  • 1/8 tsp. Lime juice

In a heavy-bottomed pan heat oil on high heat.

Add salt to all sides of the short ribs. Add to pan and brown on all sides. Remove ribs and pour off fat.

Add salt to the mushrooms. Saute on medium until the mushrooms are brown. set aside.

Add garlic and ginger and saute until soft. Add all [Spices] and add chicken stock and bring to a boil.

Let it simmer for 30 minutes.

Strain the broth.

Pour the broth into the pan, add fish sauce.

Return the ribs and mushrooms to the pan. add broth to just cover the ribs. Bring to a boil and turn down to low and simmer for 2-3 hours. Braise the ribs until they are tender and falling apart.

Transfer to bowls. dividing the meat and broth. add mushrooms, lime wedge, mint, and basil. Serve immediately.
