Ingredients:
  • 8 oz. Sliced Beef Loin
  • 2 tbsp. Cooking Oil
  • 2 tbsp. Minced Garlic
  • 1 oz. Julienned Onion
  • 2 stalk Green Onion or Leek
  • 1 oz. Red Pepper (Chili)
  • 1 tsp. Peppercorn Oil, or chef-made peppercorn oil (see " chef john signature oil" video)
  • 1 tsp. Cooking Wine
  • 1 tbsp. Soy Sauce
  • 1 tsp. Cumin Powder
  • 1 tsp. Cumin Seeds
  • 1 tsp. Black Pepper
  • 1 tsp. Salt
  • 1 tsp. Red Chili Oil

Slice green onion into a julienne.

In a cooking pan, bring 4~5 cups of water to a boil. Blanch the sliced beef for 1 to 2 minutes.

Quickly remove from hot water as soon as no more pink. Set aside.

In a wok or cooking pan over high heat, add 2 tablespoons cooking oil and minced garlic, and stir fry until fragrant. Then, add julienned onion, julienned leeks, and red chili pepper. Stir-fry quickly until the vegetables begin to soften.

Add peppercorn oil, cooking wine, beef, soy sauce, cumin powder, cumin seeds, a pinch of black pepper, a pinch of salt, and a teaspoon chili oil. Stir-fry until well blended.

Sliced Beef Loin is usually available in most Asian supermarkets. If you can't find it near you, you can substitute with beef flank steak and thinly slice it before stir-frying.
