Ingredients:
  • 1.5 cup Pork Belly
  • 5 piece Tortilla
  • 2 oz Chinese Leeks, Sliced Thin On Diagonal (80g)
  • 1 White Onion, Chopped Into Bite-size Chunks
  • 2 oz Green Bell Pepper, Diced
  • 2 oz Red Bell Pepper, Diced
  • 1 tbsp Green Onions
  • 1 tbsp Minced Ginger
  • 1 tsp Sichuan Peppercorns
  • 1 tbsp Fermented Soya Beans Finely Chopped
  • 1 tbsp Cooking Wine
  • 1 tsp Brown Sugar
  • 1 tsp Pixian Broad Bean Paste
  • 1 tbsp Soy Sauce
  • 0.5 cup Warm Water
  • 0.5 cup Garlic, Minced

Add 5 cups of water in a pot and bring to boil. Put pork belly, ginger, green onions, and Sichuan peppercorns in the boiling water and simmer to a low boil for 20~30 minutes. Drain the pork. Let it cool. Cut cooked pork belly into thin slices.

Add 1 tbsp vegetable oil on the griddle over high heat, and sear the pork belly slices on both sides until turning golden brown and set aside.

Next, add the minced garlic and toss to cook for 1 minute. Add Pixian broad bean paste, onion, leek, 30g green onion, green/red bell peppers, and cook for 2 minutes.

Throw a little cooking wine while stirring this over a high flame for less than a minute and then add the rest of the ingredients: brown sugar, bean paste, soy sauce, water, and mix these well.

Add pork belly that were set aside and continue to cook over a high flame. Be sure to keep mixing the ingredients to avoid burning anything, and also so that it will cook evenly. Wrap the pork with soft tortilla. Serve immediately! ( See stir frying tips below!)
