Cut eggplant into three pieces, split each piece in half.
Place one piece of eggplant(skin side up) in between a pair of chopsticks (this is to prevent cutting through eggplant), making three dips on top by cutting off three triangle pieces as the video shown.
In a medium bowl, mix ground pork, red wine, soy sauce, ginger, green onion, black pepper and salt.
Dust prepared eggplant with cornstarch, fill dips with meat mixture.
Deep fry till meat fillings are done.
Set burner at high heat. In an oven safe pan, stir fry garlic butter, garlic, and onion. Add tomato, ketchup, soy sauce, black pepper and water. Let simmer for a few minutes. Put in deep fried eggplant and meat, and let simmer for a few minutes. Add rosemary, cheese and red pepper on top.
