Strawberry Cheesecake

Cheesecake has always been a favorite dessert. This recipe is incredibly simple and specifically designed to make at home. This New York-style cheesecake has a few extra ingredients for a much smoother and creamier texture.Enjoy!

Ingredients:
  • Graham Crackers
  • 3 pieces Graham crackers
  • 2 tsp. Sugar
  • 1/4 cup Melted butter
  • For the Cream Cheese
  • 8 oz. Cream cheese
  • 1/2 cup Sour cream
  • 3 tbsp. Sugar
  • 1 tbsp. Vanilla extract
  • 1 tbsp. Lemon, juiced
  • 1/4 cup Heavy cream
  • 1 small Egg
  • 1 tsp. Corn starch
  • For the Strawberry Jam
  • 5 medium Strawberry
  • 1 tbsp. Sugar
  • 2 tsp. Lemon, juiced

Preheat your oven to 350°F/180°C.

Put a few graham crackers into a food processor. Add about 2 teaspoons of sugar and finely blend it. Add ¼ cup of melted butter and blend for another 30 or so seconds.

Brush the inside of the ring molds with melted butter.

Put the crushed graham crackers into the bottom of the ring molds and flatten it.

Put the ring molds into the oven and bake for about 10 minutes or until the crust is firm.Take them out of the oven and let them cool down.

Put 8 ounces of room-tempered cream cheese into a bowl. Mix until it’s somewhat soft using an electric hand mixer. Add ½ cup of sourcream. Gradually add about 3 tablespoons of sugar, and 1 tablespoons of vanilla extract into the mixture. Add a tablespoon of lemon juice, ¼ cup of heavy cream. (You may also add lemon zest as it’s traditionally done.) Mix for another minute.

In a separate bowl, lightly beat 1 small room-tempered egg. Add in the egg and 1 teaspoon of cornstarch. Mix until it’s smooth and creamy. Mix it very gently to avoid cracks in the cake. I recommend mixing it manually for more control.

Pour the mixture into the ring molds and place them into the oven. Put a baking dish filled with hot water underneath the cheesecake. Bake for 15 to 20 minutes at 350°F / 180°C. Check the cheesecake. The center of the cheesecake should still jiggle. Turn off the oven and leave the door ajar for the cheesecake to slowly cool down.

If you put the cake into the fridge immediately it may crack. After 30 minutes put the cheesecakes in the fridge for at least 4 hours. In the meantime, make a simple strawberry compote.

Dice 5 strawberry and place them into a saucepan.

Add 1 tablespoon of sugar and 2 teaspoons of lemon juice.

Cook on medium heat until the strawberries are soft. Cool down the compote.

Take the cheesecakes out of the ring molds.

Pour the strawberry compote over them.

Garnish with fresh strawberries and blueberries, serve.
