Ingredients:
  • 1 pack Firm tofu
  • Deep-fry
  • 1 qt. Cooking oil
  • Stir-fry
  • 2 tbsp. Cooking oil
  • 1 ea. Winter bamboo shoot
  • 4 cloves Garlic, sliced
  • 1 cup Chicken broth
  • 1 small Carrot, sliced
  • 2 tbsp. Potato starch slurry(1 to 2 ratio of cornstarch to water)
  • 1 tbsp. Green onion, chopped
  • 1 tsp. Sesame oil
  • Seasoning
  • 1 tbsp. Oyster sauce
  • 1 tsp. Light soy sauce
  • 1 tsp. Sugar
  • 1 tbsp. Shaoxing wine
  • 1/8 tsp. Ground salt
  • 1/8 tsp. White pepper

Horizontally cut the tofu into two pieces of the same thickness, and then cut the tofu diagonally into triangles.

Peel off the shell of the winter bamboo sprout and cut it into slices.

Pour some oil into a large pot. When the oil temperature rises to 300°F/150°C, add the tofu piece by piece, and fry for 2 to 3 minutes until it turns golden brown. Then remove and drain the oil.

Pour some oil in a large wok, set over medium heat, add the bamboo sprout and stir for 1 to 2 minutes.

While thoroughly stirred, add garlic slices and stir until it smells aromatic. Pour in chicken broth, add [Seasoning], and cook for 1 to 2 minutes to let the flavor of the bamboo sprout incorporated into the soup.

Add tofu and cook for another 1 to 2 minutes to let the tofu thoroughly absorb the soup.

Then add carrots and the watery potato starch, stir to thicken, add sesame oil and chopped scallions, stir evenly. Now it's ready to serve.
