Ingredients:
  • 1/2 lb. Fava beans
  • 1 qt. Water
  • 1/8 tsp. Baking soda
  • 1/8 tsp. Salt
  • Stir-fry
  • 1 tbsp. Cooking oil
  • 2 oz. Pancetta, sliced
  • 2 tbsp. Green onion, chopped
  • 1 tsp. Shaoxing wine
  • 3 oz. Water chestnut, sliced
  • 1 cup Salted chicken stock
  • 1/4 tsp. Sugar
  • 1/4 tsp. Ground salt
  • 1/8 tsp. White pepper
  • 1 small Carrot, sliced
  • 2 tbsp. Potato starch slurry(1 to 2 ratio of cornstarch to water)

Peel the fava beans. (note: Must peel off three layers of fava bean skins. Otherwise, they are too tough to chew )

In a small cooking pot over high heat, add 1qt water and bring it to a boil, add baking soda and salt, add fava beans into the pot for 20-30 seconds, quickly remove the beans from boiling water, and put them in ice-cold water to cool. Drain. (note: Do not blanch in water too long, otherwise, the fava beans will turn yellow. )

In a medium pan over medium heat, add oil and pancetta, stir fry for 1-2 minutes until fragrant, add 1 tbsp green onion, Shaoxing wine, water chestnut, stir fry several times, add chicken broth, then add sugar, salt, and white pepper to season, continue to add fava beans, carrot slices, and minced 1 tbsp green onion. Add potato slurry to thicken, quickly stir to mix thoroughly. Done. (Add minced green onion separately in two steps.)
