Steamed Shrimp On Loofah

Loofah is known for its special ingredient, saponins, which can balance yin and yang in Chinese medicine. Tender, young loofah are wonderful to eat. When cooked, the flavor is mild and slightly sweet.

Ingredients:
  • 7 oz. Loofah
  • 7 oz. Shrimp
  • 0.5 stalk Green onion
  • 0.5 pieces Ginger
  • 0.25 cup Water
  • 0.5 tsp. Pepper [Marinade]
  • 0.1 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water) 
  • 1 tsp. Sugar [Marinade]

Peel loofah then cut loofah into about 1.5 inch pieces. Take about ½ inner part out to form a cup.

Combine minced shrimp, green onion, ginger and small amount of water in a mixing bowl.

Add salt, sugar, and pepper.

Using a small spoon, scope shrimp mixture into loofah cups.

Steam for about 10 minute.

In a saucepan, over high heat, add broth, water, soy sauce, thickening with starch. Then add a little bit sesame oil.

Pour the sauce over the steamed loofah.

Serve immediately. It’s fresh, tender and juicy.
